Many times in life we are given the opportunity to “re-do”.  From restarting a diet to remarrying, the chance to re-create a part of ourselves is powerful. 
Sometimes the opportunity to “re” comes in a what seems like a difficult situation.  When circumstances seem beyond your control, a coping strategy can be to “re”–restart, redo, review, renew, relax, revisit, release.
Other times, life may be rolling along fine and you take it upon yourself to revamp.  If you doubt the power of re, then take a moment to look at its opposite…reflect on the times you’ve gone too long without a vacation and remember how quickly the feeling of being in a rut sets in. 
The need for recreation allows us to re-create through reassessing and realigning our priorities with our creativity.
So, I encourage you to RE.  May you be reawakened and reattached to what is important to you while you recalibrate your settings a higher level.

Watermelons mean Summmertime!

I grew up outside of Houston, Texas in a very small town called Hempstead.  Other Texas towns might think they are the watermelon capital – but they’re not! 

 Hempstead is THE WATERMELON CAPITAL of Texas!!!

Thus, it was a summertime rite of passage to eat watermelon — with your hands not a fork, some people sprinkling salt on theirs – others lime, all with red, sticky juice dripping off their chins.  Adults and kids alike all loving it and knowing the first ripe melon meant summer was almost here.  Time for reunions and bar-b-ques,  festivals and cookoffs, trips to the beach and sand volleyball games.  Good Stuff all under the beautiful blue sky and Texas Sun.  Wonderful memories and I still make them with my boys.  We ALWAYS cut the first watermelon in the FRONT yard and eat it on the sidewalk. . . . hoping the neighbors will see and come over . . . making new memories! 

So, when I saw a photo of watermelon cakepops floating around the internet I knew I had to make some.  And I did.  What do you think?  Maybe you could make some and conjur up some summertime memories of your own if watermelons don’t grow where you live.

I get lots of questions about how big a cakeball/pop is – should be – needs to be.  I know other people who offer different sizes for different prices.  This was too complicated for me.  So, in the beginning, I made about 3 different sizes and gave them out to my neighbors and asked for opinions.

The 2-bite size won by a landslide.  1-bite was too small, especially if you wanted it on a stick.  Anything larger than 2-bites and it seemed you might need a plate and fork and that wasn’t what I was going for.  It’s also good to know that a regular cake recipe makes approximately 40 – 43 of this size cakeballs.  (45 if you don’t eat any while you are making them. . . just sayin’)  It makes it easier to estimate once you know that.

So . . . the 2-bite size is where I landed and have stayed.  I mix my cake and icing together and weigh out 1 ounce (YES!! each and every single one!!).  It will weigh more after you dip and decorate.  If I am doing a mixed order of some that are just dipped and decorated with drizzle and some carrot cake ones that are covered in crushed pecans                          (pa-cahns….for all your non-Texans reading this – NOT pee-can!) I make the carrot ones just a bit smaller than 1 ounce.  If not they end up looking much bigger because of the pecans on the outside.

I’ve since learned that this size is perfect to fit in mini-cupcake liners and different sized bakers boxes.  Unfortunately they don’t really fit in candy boxes because they are a tiny bit bigger than your average truffle.  I think, finished, mine end up being approximately 1 ½” x 1 ½”.  (the carrot balls end up bigger)
