chocolate sugar cookies

(Thank God it’s Fall!)

After toasting all summer in the Texas heat, I always welcome the fall season with open arms.  And to honor this wonderful change, a platter of cookies was most definitely in order!… Since brown is one of the official colors of fall, I decided to go with chocolate sugar cookies in place of of the typical white sugar cookie.

Having a chocolate cookie base not only tastes great, but also prevents me from having to mix a batch of brown icing.  And as a cookie decorator, I’m always looking for ways to make the best designs with the fewest icing colors. 

Another thing I always try to do is mix up the patterns and designs that is iced onto the cookies.  It’s amazing how you different you can make 2 cookies look with the icing alone, even if cut by the same cutter. 

Some no-fail techniques that always work great on your cookies are:  polka dotting (inside the cookie or as an outline around the edge), marbleizing (toothpick dragging between 2 colors of wet icing), and sprinkling (all or part of the cookie with sanding sugars and/or sprinkles).  All three of these techniques can be used in a multitude of ways to make unique patterns on your fall cookies.
